Traditional Cretan Easter Recipes
Easter "lychnarakia" (oil lamps)
- 500 gr flour
- 1 tablespoon olive oil
- 1 egg
- 1 tablespoon sugar
- Water as much as it takes for soft dough
- 700 gr sweet myzithra
- 2 eggs
- 1 cup honey
- ½ teaspoon grated mastic
Make the soft dough; add a little more flour if necessary.
Roll out the phyllo dough and press on it a coffee saucer to cut out round dough discs. At the center of each dough disc place a tablespoon of stuffing. Now, using your thumb and index finger at any point in the perimeter of the dough disc, pinch the dough so that it raises a little. Repeat the same all around the dough disc until you have enclosed the stuffing all around the disc. Sprinkle with cinnamon and bake in the oven in moderate heat.
